Stanford University Libraries
The Stanford University Libraries offer the most comprehensive collection of copyright and fair use resources that I know of. You could spend hours going through all the resources offered on the site. Copyright and creativity for ethical digital citizens, organized by the Internet Education Foundation, offers lesson plans and videos for teaching copyright in elementary, middle, and high school settings. The slides, lesson plans (in PDF format), and videos are available to use for free in your classroom. Below is a sample video from the elementary school lesson series.

Copyright, Exceptions, and Fair Use: Intellectual Property Crash Course #3
This video is the third installment in the Crash Course series on intellectual property. In typical Crash Course style, the video is a quick overview of copyright exceptions and fair use examples in action. The video is appropriate for high school students. Students under high school age may not understand many of the nuances used in the video.
